Arni Stifatho (Lamb Meat Stew)

~ Ingredients:
 
~ I kilo of Lamb Meat
~ 750 ml of red dry wine
~ 8-10 tbsp of olive oil
~ 300 g of canned tomatoes
~ 1 tbsp of tomato paste
~ 800 g of small onions
~ 6 cloves of garlic sliced
~ 4-5 bay leaves
~ 2 cinnamon sticks
~ 4-5 cloves
~ 1/2 tsp of cumin
~ A pinch of cardamom
~ 1/2 tsp of sugar
~ salt and pepper to taste
 
   

 

~ Wash and cut your meat in small pieces and place into a large enough bowl.
~ Pour the red wine over your meat; add the cinnamon sticks, bay leaves and cloves.
~ Stir the meat so the wine go all over the meat and place in the fridge to marinate overnight.
~ The next day, drain meat in another bowl but keep the wine with spices.
~ Heat up the olive oil in a casserole, fry your meat lightly take out and put aside.
~ In the same oil, sauté the small onions and sliced garlic until they are tender.
~ Pour in your canned tomatoes, add the tomato paste and simmer for a few minutes.
~ Add your meat with it’s juice and the wine with the spices.
~ Add the sugar, cumin, cardamom and salt and pepper to taste.
~ Cover your casserole and simmer on low heat for about 60-70 minutes or until juice is thick.
~ Uncover and stir from time to time and add some hot water if necessary.
~ Arni Stfatho should me served hot.
~ Arni Stifatho can be eaten all by it self as a meal or it can be accompanied with rise, vegetables or mush potatoes.
