Arnaki Frikase (Lamb Frikase)

| ~ Ingredients: ~ 2 kilos of Lamb ~ 1 cup of oil ~ 5-6 bunches of fresh onions (about a kilo) ~ 1/2 a kilo of lettuce ~ 1/2 a cup of finely cut dill ~ 1/4 cup of finely chopped parsley ~ 2 eggs ~ 1/2 a cup of lemon juice ~ Salt and pepper to taste |

| ~ Wash and cut the lamb in serving pieces, or ask your butcher to cut them. ~ Pour the oil in a casserole to heat up on high heat and sauté the lamb pieces on all sides. ~ Once all pieces of lamb are sautéed add salt, pepper to taste and half a cup of water. ~ Cover your casserole, lower the heat and simmer until the meat is almost cooked. ~ In the meantime clean the onions, wash onions and lettuce and cut in large pieces. ~ In order for your meat to be lighter you can place the onions in a sauce pan with some water and bring them a boil. ~ In the casserole with the meat add the onions, lettuce, dill and parsley and let it boil without disintegrating the vegetables. ~ After cooking the meat with the vegetables add some more water if needed (when boiling vegetables usually bring out some water). ~ When the meal is ready break the eggs in a bowl, add the lemon juice and beat well to mix. ~ Pour some hot juice from the casserole in the bowl whisking constantly. ~ Pour the egg mixture in the casserole and move it in circular movements in order to go everywhere. ~ Serve your Arni Frikase (Lamb Frikase) immediately and hot. ~ Good luck and bon appétit. |
