Anginares a la Polita (Artichokes a la Polita)

| ~ Ingredients: ~ 10 fresh Artichoke Hearts ~ 320g of small Potatoes ~ 2 large onion, thinly sliced ~ 100g of small onions ~ 2-3 carrots, sliced ~ 1 a cup of olive oil ~ The juice of 2-3 lemons ~ 2 cup hot water ~ 3 tbsp freshly chopped dill ~ Salt and pepper to taste |

| ~ Clean the artichokes from the leaves, the insides and cut the stem off leaving about 2 inches. ~ Rub them with 1/2 a lemon and put them in water with salt and juice of 1/2 a lemon in order to stay white. ~ Clean the potatoes, and small onions and carrots (slice). ~ Heat up the olive oil in a large saucepan and add the small onions, sliced onions and sauté gently for 2-3 minutes stirring occasionally. ~ Add the sliced carrots and the dill and cook for about 10 minutes on low heat stirring constantly. ~ Add the water and the juice of 1-1/2 lemon and slowly bring to boil. ~ Add the potatoes and artichokes with the stems upwards adding a little more hot water so the artichokes are almost covered with liquid. ~ Season with salt and black pepper to taste, cover the pot and simmer for about 50 minutes or until the artichokes and the rest of the vegetables are tender. ~ Serve hot. ~ Good luck and bon appétit. |
