Almiri Galatopita (Salted Milk Pie)

| ~ Ingredients: ~ 3 1/2 cups flour, all purpose ~ 4 tablespoons olive oil for the brushing of the pan ~ 3 cups milk ~ 1/2 cup olive oil for the mix ~ 2 onions, sautéed ~ 1/2 bunch of fresh mint finely chopped ~ 2 cups crumbled feta cheese ~ 1 cup of Regato cheese from Denmark or ricotta ~ 1/4 bunch of parsley finely chopped ~ 4 eggs lightly beaten ~ 1 pinch cinnamon 1/4 tsp (optional) |

| ~ In a large enough bowl, place the flour, milk and the olive oil and mix well. ~ Make sure that the flour is mixed well with the milk and oil so there is no lumps. ~ Clean and finely chop the onions and lightly sauté them in the 4 tbsp of olive oil on low heat. ~ After you sauté the onions pour the whole content of the frying pan into the flour mixture. ~ Add the chopped mint, chopped parsley, eggs, feta cheese, ricato or ricotta cheese and cinnamon (if used). ~ Stir gently in order to mix all ingredients. ~ Grease your Pyrex baking dish and pour your mixture in it making sure that is spread out evenly. ~ Bake in a preheated oven at 180 degrees Celsius or 350 Fahrenheit for about 40-60 minutes or until golden brown on top. ~ Another way of knowing if it is cooked is by sticking a knife in it and it comes out dry. ~ If the knife is wet cook for another 10 minutes. ~ Remove from the oven, let it cool down a little bit and cut in serving pieces. ~ Almiri Galatopita (Salted Milk Pie) can be eaten hot or cold. ~ Good luck and enjoy. |
